gluten free homemade {healthier} brownies

I'm so excited to share with y'all this amazing recipe! I'm a sucker for anything chocolate, especially a good brownie! I love this recipe because it's a much healthier alternative to the classic we all know and love. Not only is it gluten free, but it's 100% homemade (aka no sketchy ingredients from a box) and uses healthy substitutes to make it even more guilt-free! It's the perfect treat to make for Valentine's day, and it won't ruin your summer-bod diet! 

GLUTEN FREE REDUCED GUILT BROWNIES:

3/4 cup all-purpose gluten free flour

3/4 cup cane sugar

1/2 cup unsweetened cocoa powder

1/4 tsp baking powder

3 eggs

1 tbsp vanilla extract

1/3 cup canola oil

1/4 cup water

1. Preheat oven to 350*

2. Sift the flour, sugar, cocoa, and baking powder into a medium sized bowl

3. Mix in eggs, vanilla, oil and water

4. Pour into a greased 8 x 8 pan

5. Bake for 20-25 minutes

I've only made this once, but it has easily become one of my favorite sweet treats. You would never know it wasn't made from a box, which is always a huge problem I have with homemade brownies. Even the batter tastes like Betty Crocker made it herself, and we all know that's the most important part! 

Substitutes:

I switched out canola oil for butter, but there are still even more healthy subs you can make! To reduce the sugar, both applesauce and medjool dates can be substituted. I personally have never found a recipe for brownies using applesauce that I like because I can always seem to taste the apple! Medjool dates, on the other hand, sound like an amazing addition! They would definitely make the brownies more dense, but it switches out cane sugar for natural sugars. Just make sure to pit the dates before blending into a paste! I measured 1/3 cup oil, and then continued to fill the measuring cup with water until it reached 1/2 cup. That way it cut out some of the oil but still added liquid! The next time I make these, I'll probably try 2 eggs instead of 3 to get a denser brownie, but 3 works for a more cakey dessert. Also, don't skip the sifter! I used to always think it was pointless, but if any of y'all have made homemade hot chocolate, you'll know how clumpy cocoa can get! Sifting (the cocoa especially) gets rid of those annoying clumps and creates a

much

 smoother batter!

healthier chocolate pecan pie

How good does this chocolate pecan pie look?! I always like to find substitutes to make recipes healthier, so I was pumped to find this recipe made with medjool dates! I ended up altering it a little bit, so I'll include my recipe and the original below! 

RECIPE:

1 pie crust

1 cup medjool dates

1 stick salted butter 

1/2 cup light brown sugar

1/3 cup maple syrup

1/3 cup light corn syrup 

1/2 tsp vanilla

4 eggs 

3/4 cup pecans

1/2 cup chocolate chips

Preheat the oven to 350*. Place the pie crust into a pie plate and set aside. Mix the butter, sugar, syrups, vanilla and eggs in a bowl {the butter should be softened or even slightly melted}. Cut the pits out of the dates, and then grind them in a food processor until they become a paste. Spread the dates onto the pie crust, and then layer the pecans and chocolate chips over it. Pour the filling over the crust. Sprinkle extra pecans and chocolate chips on top. Bake for about 40 minutes or until golden.

*If I were making this again, I would try 1/4 cup light corn syrup and 3 eggs.*
