 showed her flatbread recipe, I was inspired to show my own favorites! 

Two of my favorite flatbreads are pesto chicken & veggie and chicken. Obviously chicken can be substituted for another meat or omitted in either dish, but I always go for chicken!

to make:

PESTO CHICKEN FLATBREAD:

1 flatbread (I used one from Trader Joes, but I've also gotten them from Wal-Mart)

1/2 roma tomato

2 tbsp pesto

1/4 cup low fat feta cheese

3 ounces chicken

-Spread the pesto onto the flatbread, and then layer tomatoes, chicken and feta. Broil for 5-10 minutes, watching regularly to avoid burning.

VEGGIE CHICKEN FLATBREAD:

1 flatbread

1/4 red bell pepper

1/4 yellow bell pepper

1/4 orange bell pepper

1/4 green bell pepper

1/2 roma tomato

1/4 cup low fat mozzarella cheese

3 ounces chicken 

-Layer the tomatoes onto the flatbread, and then sprinkle on top the diced bell peppers, chicken and cheese. Broil for 5-10 minutes, watching regularly to avoid burning.
